How to prepare Beetroot pichadi

Ingredients

  • Beetroot – 1 ( Medium sized)
  • Turmeric powder – 1/4 tsp
  • Curd – 1/2 cup (beaten)
  • Salt – to taste
  • Oil – 2 tblsp
  • To grind
  • Grated coconut – 3-4 tblsp
  • Mustard seeds – 1/4
  • Cumin seeds – 1/2 tsp
  • Green chillies – 2 nos

For Seasoning

  • Mustard seeds – 1/4
  • Curry leaves – 1 spring
  • Shallots – 2
  • Dry red chili – 1

Method

  • Wash peel and grate the beetroot
  • Grind all the above ingredients which is mentioned “To grind” and keep separately
  • Take the grated beetroot onto the pan, add little amount of salt and cook it for about 5 to 10 minutes
  • Add the ground paste to the beetroot mix and mix it for 5 minutes
  • Remove from gas and allow it cool.
  • Add beaten curd and mix it well
  • Heat oil in pan and pop some mustard seeds and curry leaves then add chopped shallots and red chili. Fry till the shallots turn golden brown
  • Pour this on to the beetroot. Enjoy with white rice
